Umami-Related Dietary Education in Europe

  • Umami-related dietary education began in Europe in the spring of 2010. In the United Kingdom, umami was introduced on the Web site of the British Nutrition Foundation (BNF) and many educators are now getting to learn about umami here: http://www.foodafactoflife.org.uk/Sheet.aspx?siteId=19§ionId=83&contentId=308.


    In France, our first umami workshop was held on April 17th. In collaboration with the Maison de la culture du Japon a Paris (MCJP) in Paris and the non-profit organization the Japanese Culinary Academy (JCA), the Umami Information Center invited 30 French parent-child couples to the MCJP located in the center of Paris. The children learned about and tasted umami during the first part of the workshop.
    They then went on to listen to the lecture of Ms. Isami Omori, the director of JCA, and taste tomatoes and various soup stocks familiar in French cuisine. A cooking class followed where they enjoyed making and tasting okonomiyaki (a Japanese style savory pancake) for the first time. The children were very excited to learn the secret of umami, and their parents left feeling inspired to incorporate umami into their daily cooking. Thanks to the Teachers' Organization of Skill Sharing (TOSS) in Japan and Ajinomoto Co., Inc., the Umami Information Center was able to put together a textbook for French children to introduce them to umami.
