Umami workshop for British Culinary Experts

  • Since Umami Summit in London in 2009, UIC receives a number of inquiries from UK and other European region regarding umami. Last week, on November 15, UIC had an opportunity to offer the Umami Lecture for British food culinary experts.
    Mr. Neil Nugent, Executive chef of Waitrose and Messrs. Wayne Edwards and Charles Banks of the Food People had basic knowledge on umami and dashi. We had a very good time to exchange information on culinary trend in Europe and Japan.
