Salmon Parcel with Noodle Salad


An adaptable home recipe from Sat Bains of double-Michelin-starred Restaurant Sat Bains with Rooms. He freely incorporates Umami ingredients from all over the world into his innovative cuisine at his restaurant. Here the Umami element in salmon is powered up by the combination of Umami seasonings. Be adventurous, experiment, and taste the difference!⠀

<Ingredients and method>⠀

1. Skin the salmon and place on a large parchment paper⠀
2. Season with a selection of these Umami seasonings - miso, soy sauce, nam pla (Thai fish sauce), and chilli, salt, mirin, oil⠀
(An example combination - enough for 4 portions)⠀
30ml soy sauce⠀
50ml sesame oil⠀
50 ml plain oil⠀
pinch of salt⠀
30g grated ginger⠀
5 cloves grated garlic⠀
pinch of chilli flakes⠀
3. Marinade for 1-2 hours⠀
4. Make a salad with: ⠀
egg noodles⠀
a selection of: ⠀
chilli, peppers, onion, carrot, courgette, beansprouts⠀
pickled ginger⠀
peanuts, cashews, pine nuts, raisins, cranberries⠀
mint, coriander, basil⠀
Slice all the vegetables super thin. ⠀
You can dress the salad with the marinade if you like.⠀
5. Close the salmon parcel and cook it for 12-15 mins in the oven at 180°C

Make sure the salmon is slightly undercooked.⠀
I cook it to 40°C (temperate inside. Use a meat thermometer) and let it rest for 5 mins.⠀
Serve and eat. ⠀Enjoy.
