500g of purple salad leaves including endive, Belgium chicory, treviso, chioggia or radicchio⠀
2 tbsp dried pumpkin seeds*⠀

Creamy cashew nut dressing⠀

60g raw cashew nuts*⠀
1 1/2 tsp nutritional yeast*⠀
1 tsp Dijon mustard*⠀
1 tbsp cider vinegar⠀
1 tbsp miso paste*⠀
2 tbsp vegetable oil⠀
3 tbsp water⠀
Salt and pepper to taste
