Green Tea Smoothies

Green tea contains a significant amount of Glutamate. It is also rich in a lesser known Umami amino acid, Theanine. We made smoothies using cold-brewed green tea with some fruits and vegetables that are rich in Umami.

Cold-brewing method:⠀

Put 7g of loose green tea leaves or two green tea bags in a jug. ⠀
Add 500ml filtered or mineral water. Soft water makes sweeter-tasting tea than hard water.⠀
Leave to brew for 3 hours or overnight in a refrigerator.⠀
Strain through a sieve or tea-strainer.⠀

Brewed slowly in this way, the green tea contains less tannin and caffeine, but more Theanine and an antioxidant called catechin. Lots of goodies!⠀
